- Coconut Lime Soup: Melt 2 tbsp butter over medium heat in a saucepan. Saute 1 small chopped onion for 4 minutes before adding 3 cups coconut juice, 1/4 cup peanut butter, and 2 tbsp chicken bouillon. Bring to a boil then reduce to simmer for 3 minutes. Remove from heat and add ¼ cup chopped fresh cilantro and 2 tbsp lime juice before portioning into 5 bowls.
- Black Rice Pudding: Bring 2 cups Coconut Juice, 1 cup Thai black rice, and 1 cup light cream to a boil in a small saucepan. Reduce heat and simmer, uncovered, for 45 minutes. Toast ¼ cup of unsweetened coconut flakes on a baking sheet for 5 minutes at 350 degrees F. Add 3 tbsp brown sugar to rice and simmer for a few minutes longer, until pudding reaches desired consistency. Top each serving with toasted coconut.
